As the sun withdraws behind the Ardèche hills,
the table comes alive.
Beneath centuries-old olive trees, in the softness of the evening, a dinner unfolds — intimate, gastronomic, almost secret. Lanterns cast their light on ancient stone, the plateau breeze brushes the linen, and the Coiron sky opens up, vast and silent.
Here, time does not pass. It settles.

Richard Rocle
Auberge de Montfleury · Saint-Germain, Ardèche
Trained at the Escoffier school from the age of 13, Richard Rocle built a classical technique he gradually set free — adding modern touches and Asian inspirations. For him, cooking is an art of the ephemeral that invites sharing and travel through the awakening of all the senses.
Michelin-starred since 2019, he creates a bespoke menu for every dinner at the Mas, inspired by the seasons, small Ardèche producers and the particular light of the Coiron. Much sincerity, a touch of tradition, imagination seasoned with originality in just the right measure.

Welcome at the Mas
A welcome drink at sunset — Champagne or sparkling Ardèche wine — on the stone terrace.
Taking your seats
Lanterns, candles, linen tablecloth, chosen crockery. The atmosphere settles gently with the night.
Dinner in 4 to 7 courses
Each dish arrives in its own time. The chef comes to the table to present the produce and the intentions behind the menu.
Wine pairings
A selection of Ardèche vintages or great Rhône estates, matched to each course by the chef.
Beneath the stars
Dessert, homemade herbal tea from the garden, silence. On certain nights the Coiron offers one of the most star-filled skies in France.
